When the wine tells the story of the evening
There are restaurant visits you remember for a long time. Not just because of the extraordinary cuisine, but because a single wine defines the entire evening. That's exactly what I experienced during my visit to Vitus Winkler's restaurant.
Instead of opting for the suggested wine pairing, I consciously wanted to go my own way this time. For me, that's one of the most beautiful aspects of fine dining: the freedom to choose the perfect wine yourself and accompany the menu in a very personal way.
Why I decided against the classic wine pairing
The wine pairing at a Michelin-starred restaurant is usually excellently coordinated. Nevertheless, I was drawn to the opportunity to find a wine myself that would highlight the character of the menu and at the same time reflect my own taste.
Especially in upscale gastronomy, an excellent wine list offers the chance to discover true treasures - wines that not only accompany a menu but give it a whole new dimension.
The Decision: White Wine Instead of Red Wine
Vitus Winkler's cuisine is characterized by delicate herbs, extraordinary vegetable compositions, and an impressive lightness. It quickly became clear, therefore, that a powerful red wine would not be the ideal choice here.
I was looking for a white wine with:
- precise minerality
- elegant fruit
- fine herbal spice
- extraordinary depth
- long finish
Qualities that great Austrian white wines combine in an impressive way.
Wachau or Southern Styria?
Mentally, my journey first led me through Austria's most important white wine regions.
The mineral elegance of Southern Styria was an option, as were the powerful white wines from Burgenland. Ultimately, however, the Wachau captivated me, a region that has been among Europe's most renowned white wine origins for decades.
My choice fell on one of Austria's most famous and internationally highly rated wines:
Grüner Veltliner “Unendlich” from Winery F.X. Pichler
The very first sip made it clear why Grüner Veltliner “Unendlich” from F.X. Pichler enjoys cult status worldwide.
The nose already revealed fascinating aromatics:
- ripe yellow fruits
- honeydew melon
- fine mandarin zest
- white pepper
- elegant herbal spice
- subtle smoky notes
- profound minerality
On the palate, the wine impressed with an exceptional balance between power and precision. The combination of concentrated fruit, fine spice, and saline minerality created enormous depth and a seemingly endless finish.
Every sip felt complex without ever appearing heavy – precisely that elegance for which great Wachau wines are valued worldwide.
Perfect Harmony with Vitus Winkler's Michelin-Starred Cuisine
The interplay between wine and cuisine was particularly impressive.
The herbal aromas, delicate vegetable dishes, and precisely composed sauces were not overshadowed by the Grüner Veltliner, but elegantly highlighted.
The wine never pushed itself to the forefront. Instead, a remarkable harmony emerged, where wine and food merged and enhanced each other.
This is precisely what makes exceptional food and wine pairings.
Conclusion: One of Austria's Best Grüner Veltliners
Sometimes it's worth straying from the traditional path.
The house wine pairing would undoubtedly have been excellent. But the conscious decision to choose a wine myself made the evening even more personal.
With the Grüner Veltliner “Unendlich” from F.X. Pichler, I haven't regretted this decision for a single moment.
This wine is exemplary of the enormous potential of the Wachau and is for me one of Austria's most impressive Grüner Veltliners. It convinces not through loudness, but through precision, depth, and a virtually boundless elegance, just as its name promises: Unendlich (Endless).
