As a young wine, Cabernet Sauvignon has a strong, fruit-driven bouquet and can sometimes be harsh and tannic on the palate. A good Cabernet Sauvignon increasingly develops fine roasted aromas as it matures, as well as aromas of blackcurrants, liquorice and paprika.
