Description
The Beaune “En Montagne Saint-Désiré” 2021 is an interesting specialty in the range. The Chardonnay plot is located high on the slope above Beaune and in the immediate vicinity of the renowned Clos des Mouches. The light soils, heavily influenced by limestone, offer very good conditions for Chardonnay and promote a fresh, straightforward, and mineral style.
The vines within the plot have different ages, lending the wine a combination of freshness and substance. After vinification, the Chardonnay matures for around eleven months in oak barrels. The aging is intended to be less wood-driven and more about bringing structure and calmness to the wine.
The 2021 vintage particularly beautifully emphasizes the cool and precise side of this origin. The result is a distinctive white Beaune that combines delicate creaminess with lively tension and shows how interesting Chardonnay from the higher areas of the appellation can be.
The Domaine Violot-Guillemard is a traditional family-run estate from Pommard. The focus of their work is to present the different terroirs of the Côte de Beaune as clearly as possible. The vineyards are farmed organically, while in the cellar, a deliberately restrained approach is taken to allow origin and vintage to determine the character of the wines.
