Description
The HILL 3 represents the pinnacle of noble sweet wines in the premium range of the Leo Hillinger winery from Jois in Burgenland. While HILL 1 stands for red wine and HILL 2 for a sophisticated white wine, HILL 3 is dedicated to the great Austrian tradition of sweet wines. The 2024 vintage is produced as a Trockenbeerenauslese and bottled exclusively in 0.375-liter bottles.
For the HILL 3 2024, Hillinger uses 100% Scheurebe. The grapes are hand-picked and sourced from organically farmed vineyards. Crucial for this wine style are highly dehydrated, intensely concentrated berries, whose low juice content results in an enormous concentration of sugar, acidity, and aromas. The Pannonian climate around Lake Neusiedl, in particular, provides excellent conditions for the development of such noble sweet wines.
After the manual harvest, the fermentation takes place in stainless steel tanks. The wine then matures for about four months in large wooden barrels. This aging process is deliberately understated: it is not the wood, but the natural concentration of the Scheurebe and the interplay between sweetness and acidity that should take center stage.
With 230.9 g/l residual sugar, the HILL 3 2024 possesses a pronounced sweetness, which is balanced by a striking acidity of 7.0 g/l. As a result, the wine does not feel heavy despite its enormous concentration. With only 8% vol. alcohol, it presents itself as an intense, long-lived dessert wine with great aging potential.
