Pinela is an indigenous Vipava variety that primarily grows on the slopes of the upper part of the Vipava Valley. It does not tolerate high humidity well and prefers to grow weakly, making it suited to poor, marl-rich soils and sun-exposed sites, where it has already been planted by our Nonots. Due to its late ripening and lower sugar content, it is exclusively hand-harvested in mid-September. The grapes were cold macerated for 10 hours and then lightly pressed. The spontaneous fermentation, with partial wild fermentation, took place in stainless steel tanks, and the wine was aged on its lees for six months.
