The grapes come from the Premier Cru vineyard Les Muits in Tauxières, where calcareous soils give the Chardonnay its characteristic freshness and fine minerality.
The 2021 vintage presented winemakers in Champagne with great challenges. After an unusually mild winter, budbreak began early, before severe spring frosts destroyed a significant portion of the harvest. The remaining grapes ripened slowly and developed impressive concentration and vibrant acidity – characteristics that make this Champagne particularly precise and expressive.
Georges Remy relies on natural vinification with spontaneous fermentation, aging in wooden barrels, and the deliberate omission of dosage. The result is a Champagne with clear origins, fine depth, and an impressive balance between fruit, minerality, and elegance. A Blanc de Blancs that delights when young but also gains complexity over many years.
